Making Boli With Mom - Boli Recipe
My mom, Evangeline Paul Dhinakaran and I made boli together as she shared some of her life experiences and how God has carried her thus far. Watch the videos below and enjoy watching us spend time together.
Ingredients:
Dough
1 cup - All-Purpose Flour/Maida
1 tsp - Ghee
Pinch of Turmeric Powder
Pinch of Salt
> 1/2 cup - Water
Filling
1 1/2 cup - Jaggery
1 cup - Channa Dal
1/2 tsp - Salt
Directions:
Dough
Mix flour, ghee, turmeric powder, salt and gradually add water and knead it into a soft dough.
Once the dough is ready, apply some oil to coat the surface of the dough and allow it to rest for minimum 2 - 3 hours.
Filling
Soak the Channa Dal in water for 2 hours.
After 2 hours, take the Channa Dal, add water, just enough to immerse the dal, add little salt and cook it for 1 whistle in the pressure cooker.
After cooking the Channa Dal for 1 whistle, smash the dal.
Melt the jaggery in a pan on the stove until it becomes liquid.
Gently fold the dal into the filling, under medium heat on the stove, until mixed completely.
Assemble Boli
Spread ghee on a sheet where you are going to make the boli.
Make equal number of balls with the dough and the filling mixture.
Spread out the dough ball, into a circle shape, like a roti.
Place filling in the center of the dough and fold the dough over the filling, covering the filling.
Press the center of the ball and spread out to make a circle shape, like a boli.
Roast the boli on both sides in a pan on the stove, until golden brown.
Serving : 8 pieces
